New Video Upload–Weight Watchers Steak Taquitos & Guacamole Dinner!

Hello, Everyone!

October has just zipped by me so fast! I’ve been working a lot and you know what that means, I’ve got very little time for dinner. So when I’m low on time and have just enough points, I reach for something super easy and delicious to make – my Steak Taquitos and Guacamole Dinner!

The Steak Taquitos are packed with 29g of protein, and the guacamole is filled with delicious and super healthy avocado. Check out my video on YouTube and you’ll see why I’m so in love with this fast and easy dinner idea.

One thing you’ll notice is that I’m no longer buying Tableside’s Chunky Guacamole from my Costco’s. Back in PointsPlus, this container used to be worth 2 PPV, and it was great for satisfying my avocado cravings. But when SmartPoints came around, it jumped up a point to 3 SmartPoints per container.

Since a small avocado (82g) cost me 4 SP, I decided to opt for the real thing instead and bulk it up with my own tomatoes and onions to make it worth the points. 

I then add my favorite steak taquitos and we’re in business! LOL  In my case, I get 30 SmartPoints a day and I have a HUMONGOUS 9 SmartPoints breakfast, leaving me with 21 SP left for the day. But just in case I added something else during the day and couldn’t afford the entire box of steak taquitos for 14 SP, here’s a complete rundown of points.

Steak Taquitos & Guacamole Dinner!

Ingredients:

  • Box of Las Campanas Steak Taquitos
  • 1 avocado
  • 1 tomato
  • 1 onion
  • Morton’s 25% Less Sodium Season-All (to your taste)
  • Juice of 1/2 Lemon
  • Cilantro (or parsley), optional

Instructions:

Bake your desired amount of steak taquitos in your oven at 400 degrees for about 8 minutes, or longer if you want them crunchier.

Cut your avocado and make sure to get 82 grams to make it 4 SmartPoints, or to the desired amount of points you want to spend.

Dice a tomato and onion and combine your desired amount of the tomato and onion to your avocado. Mix well.

Add in some Season-All to your taste to your guacamole, then add the juice of half a lemon, making sure to keep out any seeds. Add some cilantro for an extra flavor boost.

Once done, cut your steak taquitos in half and use your guacamole as a dip.
