Hello, Everyone!
Y’all know I have a serious meat-tooth, so it’s not a surprise that one of my favorite recipes is my Steak ‘n’ Potatoes Dinner. I can’t wait to share it with you, after all It’s so easy to make, and it only takes 30 minutes to cook.
Ingredients:
- Melissa’s Baby Dutch Yellow Potatoes
- Walmart’s Beef Bottom Round Steaks (Thin Sliced)
Seasonings/Spices (to your taste)
- Rosemary
- Thyme
- Kosher Salt
- Weber Roasted Garlic & Herb Seasoning
- Grill Mates Montreal Steak Seasoning
- Central Market Organic Free Range Chicken Broth - Low Sodium (up to 4 cups)
- Cooking Sprays (2 Different Ones)
Instructions:
Potatoes:
First, measure out how many grams of potatoes you’re using, depending on the number of points you’re willing to spend for your dinner. I spend 7 SmartPoints on my dinner, so that comes out to 369 grams of potatoes.
- up to 123 grams = 2 SmartPoints
- up to 172 grams = 3 SmartPoints
- up to 221 grams = 4 SmartPoints
- up to 271 grams = 5 SmartPoints
- up to 320 grams = 6 SmartPoints
Next, wash your potatoes, then pat them dry with a paper towel. Arrange them in a cookie sheet lined with foil paper.
Lightly spray your potatoes with cooking spray. (Make sure you choose a cooking spray you haven’t used that day.)
Season with Rosemary, Thyme, and the Kosher salt to your taste. Place in your oven at 425 degrees for 30 – 35 minutes. (If you’re cooking more than 369 grams of potatoes, you’re going to have to adjust the temperature and time.)
Steaks:
Measure out how many steaks you’re preparing, based on the number of points you’re willing to spend on your dinner. For me, I’ve set aside 7 SmartPoints to use, so that comes out to 13 ounces of steak.
- up to 4 oz = 2 SmartPoints
- up to 6 oz = 3 SmartPoints
- up to 8 oz = 4 SmartPoints
- up to 9 oz = 5 SmartPoints
- up to 11 oz = 6 SmartPoints
Lightly spray your pan with another cooking spray and turn on your heat setting to Medium. Arrange your steaks to allow them to sit on the pan as much as possible without piling them on top of one another. This will allow for even cooking.
Season with Weber Roasted Garlic and Grill Mates seasonings to your taste. (The Grill Mates seasoning is salty, so adjust your use of this if you’re watching your sodium intake.)
Pour in some chicken broth, until you see it just beneath the steaks. Take care to not disturb the seasonings on the meat as much as possible, rather place the broth underneath the steaks.
Cover and cook for 15 minutes, making sure that you don’t run out of liquid for your steaks. If you’re out of liquid, add some more chicken broth, remembering you can use up to 4 cups for Zero SmartPoints. (At this point, you should also start the timer on your potatoes in the oven, so both dishes will cook simultaneously.)
After 15 minutes, uncover and turn your steaks over. Add more of the Weber and Grill Mates seasonings to your taste. If you’re running low on liquid, add some more chicken broth as well.
Cover and cook for another 15 minutes, making sure your liquid doesn’t run out.
After a total of 30 minutes cooking time, your dinner is ready! As shown in the video, my dinner was a total of 14 SmartPoints.
Enjoy!
Thanks, Julie! I will make it this week...
ReplyDeleteAwesome, Sue! Hope you like :)
DeleteWhy do we need to use a different cooking spray each time?
ReplyDeleteHiya, Sean! One spray is equal to Zero SmartPoints, but as you keep using the same spray throughout the same day, the amount and the points add up. To avoid this, use different cooking sprays throughout your day and you'll avoid the points! Hope this helps! :)
