I wanted to share my fave salad that’s become a staple in my home. It’s delicious and so filling – but more importantly, it’s only 4PPV!!
It’s super simple to make. First, you take your favorite leafy greens. I use a mix of the Super Greens Trio (Spinach, Chard, & Kale), Spring Mix, and Green Leaf from H.E.B.
After you’ve washed and run your leafy greens through your salad spinner, then you can add some small tomatoes, and some carrot matchsticks.
Make sure you’ve got a pretty big-sized bowl, especially if you’re like me and love a huge salad. My favorite bowl is from Rubbermaid. I just love the 14cups (3.3L) size. It’s deep and ensures my salad doesn’t end up everywhere when I toss it.
Once you have all your base salad together, (you can also add cucumbers, celery, etc., but I’ve found that any other additions aside from my base salad don’t coat as well since it increases the volume and there’s only so much ranch dressing! LOL However, you can certainly add more if you want to, just keep this in mind. And of course, if you have extra points, you can always add more dressing.) we can add some chicken.
My fave salad topping is Oscar Mayer Carving Board Southwestern Seasoned chicken. 3 oz will cost you 2PPV!
Measure 3oz and dice the pieces to spread them out evenly throughout your salad. Then we move on to my favorite part of the salad: the salad dressing! I’m obsessed with Bolthouse Farms Classic Ranch Yogurt Dressing. It’s creamy and rich. Mmmm! Just delicious. 2 1/2 Tablespoons are only 1PPV.
Toss all your ingredients together and we can now add our last ingredient: some Shaved Parmesan cheese from Kraft. 14grams will cost you only 1PPV.
Sprinkle your cheese on top and there you have it. My fave salad for only 4PPV. I also shot a video of me preparing it. Can’t wait for you to see it.
